Donut Friday! We've increased our quantities - hopefully we don't run out by noon again... But the early bird gets the worm. Donuts appear at 9 am. Also if we run out of seating downstairs feel free to check out our upstairs seating area the Ratio Loft.

New loft seating area

The bakery is open!

Great news for pastry lovers! Finally after months of waiting our Ratio Bakery is open. While we were doing the renovations at the train station it became clear that the cafe side of Ratio was going to open first because of the need for a commercial hood fan (you can thank the donuts for that). So for the last month Laurie, Megan and our team of bakers and culinary chefs have been working out of a off site commercial bakery/kitchen. The items were baked and then quickly transported to Ratio for customers to enjoy. Now when you enjoy any baking or food at Ratio you can just peek through the bakery window and see where it was made. It's very exciting.

Our list of equipment is very exciting as well. We have top of the line German made deck oven, a Swiss pastry sheeter, proofers, a blast chiller and all sorts of other precision baking tools. Within time we will be able to produce some remarkable products that haven't ever been available in Vernon.

Tomorrow is donut day and we are so excited that we will be producing all of our donuts on site with our new donut fryer. It's going to be so much fun!

Next time you are at Ratio take a peek through the bakery window and watch the treats being made. It's so exciting to watch.

Black Forest Fritter: a sour cherry fritter, dipped in a sour cherry glaze and drizzled in chocolate.

Apple PB Fritter: an apple fritter dipped in a PB glaze

Old Dirty Bastard: a ring donut dipped in chocolate, topped with crushed Oreos, and drizzled in peanut butter

Pumpkin Patch: a donut filled with a pumpkin spice butter cream and rolled in a cinnamon cardamon sugar

Licorice Twist: a donut filled with an anise buttercream, dipped in a Licorice glaze, and topped with black Licorice.

Whiskey Crunch: a donut ring dipped in a chocolate whiskey glaze and topped with crushed pretzels

Tropical Paradise: a ring donut dipped in a fresh mango glaze and topped with coconut, dried mango, and fresh pomegranate

Apple Crumble Pie: a ring donut dipped in a fresh apple glaze and topped with an oat crumble

Coconut Lime (GF): a lime donut dipped in a coconut lime glaze and topped with toasted coconut

Vegan Lemon Poppyseed (Vegan): a vegan friendly donut with lemon zest and poppyseeds topped with a bright lemon glaze.

Today is the Halloween edition of Donut Day (starts at 9 am)! Laurie and Megan have gotten in touch with their spooky sides to create these delicious treats. The winner of our donut contest is Gemma Bird with her Graveyard Donut!

Here is the menu:

  • Graveyard: ganache filled donut with Oreo crumb soil and a royal icing RIP tombstone.
  • Caramel apple fritter : apple fritter drizzled in caramel
  • Mummy Fritter: blueberry fritter with a vanilla bean glaze. Then drizzled with white royal icing and topped with eyeballs.
  • Pumpkin: filled with chocolate pastry cream with a chocolate Jack-o-Lantern face
  • Voodoo Doll: a jam filled voodoo doll donut with a chocolate glaze and a pretzel voodoo pin.
  • Spider Web: filled with vanilla pastry cream with a chocolate glaze and white chocolate web.
  • Old Dirty Bastard: ring donut dipped in chocolate & crushed Oreos + Drizzled with peanut butter.
  • Caramel Cheese Popcorn: ring donut dipped in caramel glaze and topped with caramel cheese popcorn
  • GF SPIDER: a ring donut with a chocolate glaze and white chocolate legs.
  • VEGAN GHOST: a jam filled donut with a white glaze and eyeballs.

Soooo close to opening our doors!

Just a quick note to let our friends and fans know that we are sooooo close to opening our doors! Our phone has been ringing off the hook with questions as to when we will be open. We still don't have an exact date other than to say we are really close.

Big things have been happening:

  1. All our equipment (except our deck oven that is coming from Germany) is installed and working.
  2. Our commercial hood fan & fire suppression unit is nearly installed. This is all so we can fry those delicious donuts!!!
  3. You may have heard that we also rented the upstairs of our building. This is a beautiful space that we are calling "the Loft." It will be a book-able space for board meetings, non profit groups, book clubs and after hours gatherings. It's going to be awesome!

Other things we are REALLY excited about:

  1. Laurie and Megan have been working around the clock to develop a full line of gluten free & vegan treats. If you have a dietary need - fear not - Ratio has got you covered!
  2. We are delighted to have Anni Lawrence come on staff to handle the production of our food items - soups, salads, sandwiches and tons more of delicious lunch and breakfast items.
  3. Our tea curator JagaSilk has allowed us to carry a exclusive line of their Maccha tea. We are proud to be carrying three different grades of this incredible tea - "Owl, Raven & Eagle." We can't wait for you to try them!
  4. Our STAFF! We've been working hard training our front of house staff to serve you the best quality coffee, tea and pastries in town. We've been tasting dozens of coffee's, steaming gallons of milk and soon we will move on to preparing the perfect espresso.

Look whose photo was in the business section today? The caption reads:

Andrew McWilliam, of Ratio Coffee and Pastry, serves coffee and treats from the coffee cart he owns with pastry chef Laurie Knuever. It is located next to the BigSteel Box Satellite Gallery across from Cenotaph Park and they will be opening a shop in the old train station building in August.

Remember, we're closing up the coffee cart on July 24th to prepare for the opening of our new permanent location!

The Pop up cart has been going strong since March 19th! Time flies when your having fun. We are continually humbled by the faithful support of YOU our customers. Sadly (wait for the good news) we are a week and half away from our last day. July 24 (a donut Friday) will be our last regular day at our pop up location. It's been such an incredible experience - we are sad to shut it down but very excited for what's next!

Our future home at Vernon's historic train station is coming along quite nicely. We have our basic plumbing and electrical going in now and soon it will really start to take shape. One of the main reasons we are closing the cart is so we can focus our efforts on making this space great. We think you will absolutely love it! We are still aiming for a early September opening.

Big news for coffee lovers in Vernon, BC

Ratio has BIG news! We're happy to announce that we just signed a lease for our first brick and mortar coffee shop and bakery. We will be located in the gorgeous and historic Vernon train station just off Main Street downtown Vernon.

If all goes well we will be open in the middle of September.

Thanks to all our customers for your support and encouragement along the way... We can't wait to serve you in our new location. Until then we will see you at the coffee cart!

The first Nitro Cold Brew coffee in Vernon

Using a nitrogen tap originally developed for beer, Ratio Coffee is now serving a unique cold brew coffee. Bon Appetit describes Nitro Cold brew perfectly:

Nitro coffee is slightly effervescent, ice-cold coffee on tap. It’s treated with nitrogen and/or carbon dioxide under high pressure, then chilled in a keg and served on draught with a foamy head like a Guinness. Rich and creamy—almost velvety—because of all of the tiny bubbles, it seems sweeter and less acidic than large-batch cold brew.
